Working mothers would love to cook a hot fresh meal every day and watch the family the family devour every bite. However, if you have small kids or even teenagers this does not always happen. So in order that you do not become wasteful with food, you have to learn to use leftover recipes. Reusing meals can save you the hassle of preparing a new meal from scratch, and can be cost effective and extremely useful when you are too tired to prepare a fresh meal. Eating your leftover meals means better use of water in food production and actually contributes to a more sustainable world. Here are two leftover recipes that you can try with your beef and rice leftovers.
Beef leftovers
Add some flavor to your leftover beef with a dash of
red wine and have it with dumpling. This is an easy meal ready in 1 hour.

1 cup chopped onion
•
2 tablespoons butter
•
3 carrots, chopped
•
1 1/2 cups chopped celery
•
2 (10.5 ounces) cans condensed beef broth
•
2 cups red wine
•
2 cups tomato juice
•
2 cups diced cooked beef
•
Ground black pepper to taste
•
2 tablespoons margarine, softened
•
1/4 teaspoon salt
•
1 clove garlic, chopped
•
salt to taste
•
6 tablespoons all-purpose flour
Method
•
Sauté the onions, carrots, and garlic in a
large pot with 2 tablespoons of butter until the butter is soft for about 5
minutes.
•
Stir in the broth, wine, tomato juice, and
beef. Let it simmer for 15 minutes and until the vegetable are tender
•
Make dumplings by mixing eggs, flour,
salt, and 2 tablespoons margarine or butter in a large bowl. Beat until the
mixture is soft.

Drop the mixture into the soup with the
teaspoon. Let it simmer for 10 minutes. You are now ready to serve.
Rice leftovers
Rice is a meal for anytime. Have it with some chicken
for a delicacy.
•
1 1/2 cups chopped celery
•
1 1/2 cups chopped onion
•
2 (14 ounce) can chicken broth
•
1 1/2 cups water
•
1 cup margarine
•
3 cups chopped, cooked chicken meat
•
6 cups milk, divided
•
2 cups uncooked brown rice
•
1 teaspoon chicken bouillon powder
•
Salt and pepper to taste
Method
•
Combine the celery, bouillon, broth
onions, rice, and water in a large pot and bring to a boil over high heat. Set
the heat to low, cover and let the mixture simmer until the rice has absorbed
most of the liquid.
•
Melt butter or margarine in a saucepan
over medium heat. Make roux by adding flour gradually and stirring. Add 4 cups
of milk in half cups and stir continuously.
•
Add the chicken and the roux to the rice
mixture and return to the stove over low heat.
•
Season with pepper and let it simmer for
15 minutes. You are now ready to serve.
